Carnal is a team of chefs (James Zamory, Aaron Saurer and Sean McDermott) who met in New York City but are now based in Bellingham, Washington... but why Bellingham of all places? The reason is feature film producer and Pacific Northwest native Skip Williamson, who recruited them to the seaside mountain town to create not only a full time restaurant but a brand unlike any other.
After months of hands-on involvement with the demolition, construction and licensing of the space (which was previously a legendary Bellingham bar) a gorgeous restaurant emerged. Although it’s no longer the Up & Up, we intend to do the building justice as best we can by creating something special for the community. The color palette was informed by soil pigments from Whatcom county, the patio lush with local greenery, the kitchen fully custom with a wood burning hearth and the same logo once displayed on a tent in Brooklyn, now glows fluorescent pink above North State street.
Carnal is a small town restaurant but also a brand with global ambitions.
